How To Freeze Potatoes?

Choose firm, unblemished potatoes

Wash and peel if desired

Cut into the desired shape

Blanch in boiling water until just tender

Drain immediately

Cool quickly in ice water

Drain and dry thoroughly

Spread in a single layer on a baking sheet

Freeze until solid

Transfer to airtight freezer bags or containers

Remove as much air as possible

Label and date the package

Store in the freezer until needed
