2 tablespoons butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup milk or half-and-half
1/4 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
10 to 12 ounces fresh spinach, chopped
1/4 cup grated Parmesan cheese
Melt butter in a skillet over medium heat
Add garlic and cook for 30 seconds
Stir in flour and cook for 1 minute
Slowly whisk in milk and cream
Add salt, pepper, and nutmeg
Cook until thickened, stirring constantly
Add spinach in batches and cook until wilted
Stir in Parmesan cheese
Cook until creamy and heated through
Serve warm
