Cut chicken into pieces and season with salt, black pepper, curry powder, garlic, ginger, and a little thyme
Heat oil in a pot or pan
Add chopped onion, garlic, and ginger; cook until fragrant
Add the seasoned chicken and brown on all sides
Stir in curry powder and cook briefly
Add chopped tomatoes or tomato paste if desired
Add potatoes or carrots if desired
Pour in water or chicken broth
Bring to a boil, then reduce to a simmer
Cover and cook until the chicken is tender and fully cooked
Stir occasionally and add more liquid if needed
Taste and adjust salt and seasoning
Serve hot with rice, roti, or bread
