Let the lamb chops sit at room temperature for 15 to 30 minutes
Heat a skillet, grill, or oven-safe pan over medium-high heat
Add a little oil to the pan
Sear the lamb chops for 2 to 4 minutes per side
Cook until the internal temperature reaches your preferred doneness
Remove the lamb chops from the heat
Let them rest for 5 minutes
Serve immediately
