Pat the lamb loin chops dry with paper towels
Season both sides with salt and black pepper
Add garlic, rosemary, thyme, or other desired seasonings
Let the chops sit at room temperature for 20 to 30 minutes
Heat a skillet or grill over medium-high heat
Add a small amount of oil to the pan if using a skillet
Place the chops in the hot pan or on the grill
Cook for 3 to 4 minutes on the first side
Flip the chops and cook for 2 to 4 minutes on the other side
Cook until the internal temperature reaches 135°F for medium-rare or 145°F for medium
Remove the chops from the heat
Rest the chops for 5 minutes before serving
Serve immediately
