Trim excess fat from the pork loin
Pat the pork loin dry with paper towels
Season the pork loin with salt, pepper, and desired spices
Oil the grill grates lightly
Place the pork loin over direct heat and sear all sides
Move the pork loin to indirect heat
Close the lid and grill until the internal temperature reaches 145°F
Turn the pork loin occasionally for even cooking
Remove the pork loin from the grill
Let it rest for 5 to 10 minutes
Slice against the grain and serve
