Chill a metal bowl and whisk or beaters
Use very cold milk
Add 1 to 2 tablespoons of powdered sugar per cup of milk
Add 1 teaspoon of unflavored gelatin dissolved in 1 tablespoon cold water, then warmed until clear
Whisk the milk and sugar together
Slowly pour in the gelatin mixture while whisking
Beat with a mixer on high speed until thick and foamy
Stop when soft peaks form
Use immediately or refrigerate briefly before serving
