Use fresh eggs
Crack the eggs into a bowl
Add a pinch of salt
Add a little pepper if desired
Whisk until fully blended
Heat a nonstick pan over medium heat
Add butter or oil and let it melt
Pour in the eggs
Let the eggs set slightly
Gently stir or lift the edges with a spatula
Add fillings when the top is still slightly soft
Fold the omelette in half
Cook briefly until just set
Slide onto a plate
Serve immediately
