Scoop the seeds from the pumpkin
Separate the seeds from the pulp
Rinse the seeds under cold water
Remove any remaining pumpkin flesh
Pat the seeds dry with a towel
Toss the seeds with oil and salt if desired
Spread the seeds in a single layer on a baking sheet
Bake at 300°F to 350°F until golden and crisp, stirring occasionally
Let the seeds cool before eating or storing
