Shell pistachios if needed
Remove as much skin as possible by blanching and rubbing, if desired
Dry the pistachios completely
Toast lightly if you want a deeper flavor
Cool completely
Add pistachios to a food processor
Process until finely ground
Scrape down the sides as needed
Add a small amount of neutral oil or pistachio oil if needed
Add sugar or salt only if desired
Continue processing until smooth and spreadable
Store in an airtight container
Refrigerate for longer storage
