Rinse the rice under cold water until the water runs mostly clear
Add rice and water to a pot
Use 1 cup rice to 2 cups water for white rice
Use 1 cup rice to 2 to 2.5 cups water for brown rice
Add a pinch of salt if desired
Bring the water to a boil over medium-high heat
Stir once, then reduce the heat to low
Cover the pot with a tight-fitting lid
Simmer until the water is absorbed
Cook white rice for about 15 to 18 minutes
Cook brown rice for about 40 to 45 minutes
Turn off the heat
Let the rice sit covered for 5 to 10 minutes
Fluff the rice with a fork
Serve immediately
