Wash, peel, and grate fresh carrots
Heat ghee in a heavy pan
Add the grated carrots and sauté for a few minutes
Pour in milk and cook on medium heat
Stir occasionally until the milk reduces and the carrots soften
Add sugar and mix well
Continue cooking until the mixture thickens
Add cardamom powder and mix
Add chopped nuts and raisins
Cook until the halwa reaches a rich, thick consistency
Garnish with more nuts if desired
Serve warm
