Boil water in a large pot
Add chow mein noodles or thin egg noodles
Cook until just tender
Drain the noodles
Rinse with cold water
Toss with a little oil to prevent sticking
Heat oil in a wok or large pan
Add garlic and ginger if desired
Add vegetables, meat, or tofu
Stir-fry until cooked
Add the noodles to the pan
Pour in soy sauce and other seasonings
Toss everything together until evenly coated
Cook for 1 to 2 minutes more
Serve hot
