Cut potatoes into thick fries
Rinse and soak the fries in cold water
Dry the fries thoroughly
Fry the potatoes at a lower temperature until tender
Fry them again at a higher temperature until golden and crisp
Make hot gravy
Heat cheese curds until just warm
Place fries in a bowl or plate
Add cheese curds over the fries
Pour hot gravy over the fries and curds
Serve immediately
