Rinse cilantro under cool water
Shake off excess water or pat dry with a clean towel
Gather stems and leaves into a small bunch
Trim off thick bottom stems if desired
Lay cilantro flat on a cutting board
Use a sharp knife
Slice crosswise into small pieces for chopping
Gather the chopped cilantro into a pile as you go
Continue until you reach the desired amount
If needed, pinch and chop again to make pieces more even
Store chopped cilantro in an airtight container in the refrigerator
