Bring prime rib to room temperature for 1 to 2 hours
Preheat oven to 450°F
Pat roast dry with paper towels
Season generously with salt, black pepper, garlic, and herbs if desired
Place roast fat-side up on a rack in a roasting pan
Roast at 450°F for 15 to 20 minutes
Reduce oven temperature to 325°F
Continue roasting until internal temperature reaches desired doneness
Remove at 120°F to 125°F for rare
Remove at 130°F to 135°F for medium-rare
Remove at 140°F to 145°F for medium
Rest roast loosely covered with foil for 20 to 30 minutes
Slice against the grain and serve
