Rinse the country ham if needed to remove excess salt
Soak the ham in cold water for 12 to 24 hours, changing the water several times
Place the ham in a large pot and cover it with fresh water
Bring the water to a gentle boil
Reduce to a low simmer
Cook for about 20 to 25 minutes per pound
Skim off any foam that rises to the surface
Add more water if needed to keep the ham covered
Test for doneness with a meat thermometer
Remove the ham from the pot and let it rest before slicing
Slice thinly and serve
