Preheat the oven to 400°F
Wash the beets and trim off the tops and roots
Wrap each beet in foil or place them in a covered baking dish
Bake until tender, about 45 to 90 minutes depending on size
Check doneness by piercing with a fork or knife
Remove from the oven and let cool
Peel off the skins if desired
Slice, cube, or serve whole
