Preheat the oven to 400°F (200°C)
Wash the butternut squash
Cut off both ends
Peel the skin with a vegetable peeler
Slice the squash in half lengthwise
Scoop out the seeds
Cut the squash into cubes or leave it in halves
Place the squash on a baking sheet
Drizzle with oil
Add salt and any desired seasonings
Toss to coat evenly
Spread in a single layer
Bake for 25 to 40 minutes
Flip halfway through if cubed
Bake until tender and lightly browned
Remove from the oven
Let cool slightly before serving
