Preheat the gas grill to medium-high heat
Clean and oil the grates
Form burger patties about 3/4 inch thick
Press a small dimple in the center of each patty
Season both sides with salt and pepper
Place burgers on the hot grill
Close the lid
Grill for 3 to 5 minutes on the first side
Flip the burgers once
Grill for another 3 to 5 minutes for medium doneness
Use a meat thermometer to check doneness if needed
Add cheese during the last minute if desired
Remove burgers from the grill
Let them rest for a few minutes
Toast buns on the grill if desired
Serve with your preferred toppings
