Pat the chicken dry
Coat the chicken with melted butter or oil
Mix blackening seasoning
Generously season all sides of the chicken
Preheat a cast-iron skillet over medium-high to high heat
Add a small amount of oil to the skillet
Place the chicken in the hot skillet
Cook until deeply browned on one side
Flip and cook until the other side is blackened and the chicken is cooked through
Remove from the skillet and rest before serving
