Place eggs in a single layer in a saucepan
Add cold water to cover the eggs by about 1 inch
Bring the water to a rolling boil over medium-high heat
Once boiling, turn off the heat and cover the pan
Let the eggs sit in the hot water for 9 to 12 minutes
Use 9 minutes for soft yolks
Use 11 to 12 minutes for firm yolks
Prepare a bowl of ice water while the eggs cook
Transfer the eggs to the ice water immediately after cooking
Let them cool for 5 to 10 minutes
Tap and peel the eggs under running water if needed
