Preheat oven to 375°F (190°C)
Line a baking sheet with foil and place a wire rack on top
Arrange bacon strips in a single layer on the rack
Mix brown sugar with a little black pepper or cayenne if desired
Sprinkle or press the sugar mixture onto both sides of the bacon
Bake for 15 to 25 minutes, until caramelized and crisp
Check often near the end to prevent burning
Remove from oven and let cool for 5 to 10 minutes
Transfer to parchment paper or a cooling rack to set before serving
