Pat the chicken dry
Season both sides with salt and pepper
Heat a pan over medium heat
Add oil or butter to the pan
Place the chicken in the pan
Cook until the first side is browned
Flip the chicken
Cook until the second side is browned
Reduce heat if needed
Cover the pan if the chicken is thick
Cook until the chicken is fully cooked
Check that the internal temperature reaches 165°F
Remove the chicken from the pan
Let it rest for a few minutes
Serve
