Preheat the oven to 400°F
Wash the pumpkin
Cut the pumpkin in half
Scoop out the seeds and stringy pulp
Cut the pumpkin into wedges or chunks
Place the pieces on a baking sheet
Brush or drizzle with oil if desired
Sprinkle with salt if desired
Roast for 35 to 50 minutes
Check for tenderness with a fork
Remove from the oven
Let cool slightly
Peel off the skin if needed
Mash, puree, or serve as desired
