Thaw the turkey completely in the refrigerator
Remove the neck and giblets
Pat the turkey dry with paper towels
Season the turkey inside and out with salt, pepper, and any desired herbs or spices
Place the roaster oven insert pan inside the roaster oven
Preheat the roaster oven to 325°F
Add the rack to the insert pan if using one
Place the turkey breast side up on the rack
Tuck the wing tips under the turkey
Brush the skin with melted butter or oil if desired
Cover the roaster oven with the lid
Roast the turkey at 325°F
Cook until the internal temperature reaches 165°F in the thickest part of the breast and 175°F in the thigh
Baste occasionally if desired
Check the temperature with a meat thermometer
Let the turkey rest for 20 to 30 minutes before carving
Carve and serve
