Preheat the oven to 400°F (200°C)
Trim the beet greens, leaving about 1 inch of stem
Scrub the beets clean
Pat the beets dry
Wrap each beet individually in aluminum foil or place them in a covered baking dish
Place the wrapped beets on a baking sheet
Roast for 45 to 75 minutes, depending on size
Check doneness by piercing with a fork or knife
Remove from the oven when tender
Let the beets cool until easy to handle
Peel off the skins by rubbing them with your fingers or a paper towel
Slice, cube, or serve as desired
