Preheat the oven to 450°F to 500°F
Soak the bone marrow bones in cold salted water for 12 to 24 hours, changing the water once or twice
Pat the bones dry
Place the bones cut-side up on a baking sheet
Season with salt and pepper
Roast for 15 to 20 minutes, until the marrow is soft and bubbling
Remove from the oven and let cool slightly
Serve immediately with toast, herbs, or a garnish of your choice
