Preheat the oven to 400°F
Pat the Cornish hen dry with paper towels
Season the hen inside and out with salt and pepper
Rub the hen with olive oil or melted butter
Add optional seasonings such as garlic, rosemary, thyme, or paprika
Place the hen breast-side up in a roasting pan or oven-safe skillet
Roast for 45 to 60 minutes
Baste once or twice during cooking if desired
Check that the internal temperature reaches 165°F in the thickest part of the thigh
Remove the hen from the oven
Let it rest for 10 minutes before serving
Carve and serve
