Pat the elk steak dry
Season with salt and pepper
Let it sit at room temperature for 20 to 30 minutes
Preheat a skillet, grill, or cast-iron pan over medium-high heat
Add a small amount of oil with a high smoke point
Sear the steak for 2 to 4 minutes per side
Reduce heat if needed to avoid overcooking
Cook to medium-rare or medium for best tenderness
Use a meat thermometer if possible
Remove from heat at 130°F to 135°F for medium-rare
Remove from heat at 140°F to 145°F for medium
Rest the steak for 5 to 10 minutes
Slice against the grain
Serve immediately
