Place eggs in a single layer in a saucepan
Add cold water until eggs are covered by 1–2 inches
Bring water to a boil over medium-high heat
Once boiling, reduce to a gentle boil and start timing
For 9–12 minutes: hard-boiled yolks with firm centers
For 12–15 minutes: very firm yolks
Turn off heat
Remove pan from heat
Drain hot water
Rinse eggs under cold water or place in an ice bath for 5–10 minutes
Peel under running water or tap gently to crack, then peel
Store peeled eggs in the refrigerator up to 1 week
Store unpeeled eggs in the refrigerator up to 2 weeks
