Pat the steak dry and season both sides with salt and pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat a skillet, grill, or cast-iron pan over high heat
Add a small amount of oil if using a pan
Place the steak on the hot surface
Cook without moving it for 2 to 4 minutes per side, depending on thickness
Flip once and cook the other side until browned
Check for an internal temperature of 130 to 135°F
Remove the steak from heat
Let it rest for 5 to 10 minutes before slicing
Slice against the grain and serve
