Choose bone-in pork chops, about 1 to 1.5 inches thick
Pat the chops dry
Season both sides with salt and pepper
Let the chops sit at room temperature for 20 to 30 minutes
Heat a skillet over medium-high heat
Add a small amount of oil
Sear the chops for 2 to 3 minutes per side
Lower the heat to medium or medium-low
Add butter, garlic, or herbs if desired
Cook until the internal temperature reaches 145°F
Remove the chops from the pan
Let them rest for 5 to 10 minutes
Slice against the grain if serving
Avoid overcooking
Use a meat thermometer for accuracy
Brine the chops before cooking for extra moisture
Do not cook straight from the refrigerator if possible
Cover loosely with foil while resting if needed
