Pour 1 bottle of red wine into a pot
Add 1 orange, sliced
Add 2 to 4 cinnamon sticks
Add 4 to 6 whole cloves
Add 2 to 4 star anise
Add 2 to 4 tablespoons sugar or honey
Add 1 to 2 strips of lemon peel, optional
Add 1/4 teaspoon grated nutmeg, optional
Heat gently over low heat
Do not let it boil
Stir until the sugar dissolves
Simmer for 15 to 30 minutes
Taste and adjust sweetness if needed
Strain into mugs
Serve warm
