Wear gloves and use tongs to handle fresh nopales
Rinse the nopales under cold water
Scrape off the thorns and remove any blemishes
Trim the edges and cut into strips or cubes
Rinse again to remove any remaining debris
Boil water with a pinch of salt
Add the nopales and cook for 10 to 15 minutes
Stir occasionally until the slime reduces
Drain and rinse with cold water
Sauté with oil, onion, garlic, and salt if desired
Add to tacos, eggs, salads, soups, or stews
Serve hot or chilled as needed
