Wash the okra and pat dry completely
Trim the stems and ends
Cut the okra into pieces or leave whole
Heat oil in a pan over medium heat
Add cumin seeds or mustard seeds if desired
Add chopped onions and sauté until soft
Add garlic, green chilies, or spices if desired
Add the okra and stir gently
Cook uncovered on medium heat, stirring occasionally
Add salt, turmeric, chili powder, or other seasonings
Cook until the okra is tender and no longer slimy
Add tomatoes if desired and cook until soft
Finish with lemon juice or coriander leaves if desired
Serve hot with rice, roti, or bread
