Preheat the oven to 300°F
Pat the pork butt dry with paper towels
Trim excess fat if desired
Rub the pork butt with salt, pepper, and any preferred seasonings
Place the pork butt in a roasting pan or Dutch oven
Add a small amount of liquid to the pan if desired
Cover tightly with a lid or foil
Roast for 4 to 6 hours, or until fork-tender
Check the internal temperature; aim for 195°F to 205°F for pulled pork
Remove from the oven and let rest for 20 to 30 minutes
Shred or slice the pork butt before serving
