Wash the red beets thoroughly
Trim the tops and roots, leaving a small amount of stem attached
Place the beets in a pot and cover with water
Add a pinch of salt if desired
Bring the water to a boil
Reduce to a simmer and cook until tender
Check doneness with a fork or knife
Drain the beets and let them cool slightly
Peel off the skins after cooling
Slice, dice, or serve whole as desired
