Line a baking sheet with foil and place a wire rack on top
Pat ribs dry with paper towels
Season generously with salt, pepper, and your favorite dry rub
Wrap ribs tightly in foil (bone-side down), forming a sealed packet
Bake 25–35 minutes depending on thickness
Carefully open the foil and drain excess liquid
Brush ribs with barbecue sauce or glaze (optional)
Increase oven to broil (or keep at 450°F and bake longer)
Broil or bake uncovered 8–15 minutes until browned and sticky
Rest 5–10 minutes before slicing
Check doneness: tender and pulling back from the bone; internal temp about 190–203°F (88–95°C) for best tenderness
