Drain the sauerkraut if you want a milder flavor
Rinse it briefly if you want it less sour
Heat a skillet or saucepan over medium heat
Add butter, oil, or bacon fat
Add chopped onion if desired
Cook the onion until softened
Add the sauerkraut to the pan
Stir in a little water, broth, or apple juice
Add caraway seeds, black pepper, or bay leaf if desired
Cover and simmer on low heat for 15 to 30 minutes
Stir occasionally
Add sliced apples, potatoes, sausage, or bacon if desired
Taste and adjust seasoning with salt, pepper, or sugar
Serve hot
