Pat sockeye salmon dry
Season with salt and pepper
Preheat oven to 400°F
Line a baking sheet with parchment or foil
Place salmon skin-side down on the sheet
Brush with oil or melted butter
Add lemon slices or herbs if desired
Bake for 8 to 12 minutes
Cook until the salmon flakes easily with a fork
Remove from oven and let rest for 2 minutes
Serve immediately
