Pat steaks dry with paper towels
Season both sides with salt and pepper
Let steaks sit at room temperature for 20 to 30 minutes
Heat a heavy pan over medium-high to high heat
Add a small amount of oil with a high smoke point
Place steaks in the hot pan
Do not move them for 2 to 4 minutes
Flip steaks once the first side is browned
Cook the second side for 2 to 4 minutes
Add butter, garlic, and herbs if desired
Spoon melted butter over the steaks while cooking
Check internal temperature with a meat thermometer
Remove steaks at desired doneness
Rest steaks for 5 to 10 minutes before slicing
