Wash ripe tomatoes thoroughly
Remove stems and any damaged parts
Cut tomatoes into chunks
Blanch tomatoes in boiling water for 1 to 2 minutes
Transfer tomatoes to ice water
Peel off the skins
Remove seeds if desired
Blend or crush the tomatoes until smooth
Strain the mixture for a finer puree if needed
Pour the tomato mixture into a pot
Cook over medium heat
Stir occasionally to prevent sticking
Simmer until thickened to the desired consistency
Add salt if desired
Let the puree cool
Store in a clean container or use immediately
