Pat the tuna steak dry with paper towels
Season both sides with salt and pepper
Heat a skillet over medium-high to high heat
Add a small amount of oil with a high smoke point
Wait until the pan is very hot
Place the tuna steak in the pan
Sear for 1 to 2 minutes on the first side
Flip the tuna steak
Sear for 1 to 2 minutes on the second side
Sear the edges briefly if desired
Remove the tuna steak from the pan
Rest for 1 to 2 minutes
Slice and serve immediately
