Wash and dry the zucchini
Trim the ends
Slice the zucchini into rounds, half-moons, or sticks
Place the zucchini in a bowl
Add olive oil, salt, and pepper
Toss to coat evenly
Arrange the zucchini in a single layer on a baking sheet
Optional: add garlic powder, paprika, Italian seasoning, or Parmesan
Bake for 15 to 20 minutes
Flip halfway through for even browning
Remove when tender and lightly golden
Serve immediately
