Mix equal parts flour and water in a clean jar
Stir until no dry flour remains
Cover loosely to allow airflow
Leave at room temperature
Feed daily with equal parts flour and water
Discard most of the starter before each feeding
Repeat feeding for 5 to 7 days
Watch for bubbles and a tangy smell
Use when it doubles in size within a few hours after feeding
Store in the refrigerator and feed regularly once established
