Wash the chicken pieces and pat them dry
Marinate with salt, pepper, garlic, ginger, chili powder, and lemon juice
Add yogurt or beaten egg for better coating, if desired
Let the chicken rest for 30 minutes to 2 hours
Mix flour, cornstarch, and seasonings in a bowl
Coat each chicken piece evenly in the flour mixture
Heat oil in a deep pan or skillet over medium heat
Test the oil by dropping in a small bit of coating
Carefully place the chicken pieces into the hot oil
Fry in batches without overcrowding the pan
Turn the chicken pieces until golden brown on all sides
Cook until the chicken is fully done inside
Remove the chicken and drain on paper towels
Serve hot
