Discard most of the starter, leaving a small amount in the jar
Add equal parts flour and water by weight
Stir until fully combined
Cover loosely
Leave at room temperature until active and bubbly
Repeat on a regular schedule
Adjust feeding frequency based on how often you bake
Use the starter when it is at peak rise or shortly after feeding
