Wash the zucchini
Trim off the ends
Slice, shred, or dice the zucchini
Blanch the pieces for 1 to 2 minutes
Transfer immediately to ice water
Drain and pat dry thoroughly
Spread in a single layer on a baking sheet
Freeze until solid
Transfer to freezer bags or airtight containers
Remove as much air as possible
Label and date the containers
Store in the freezer
