Choose fresh, firm cauliflower with no brown spots or soft areas
Remove the leaves and core
Cut the cauliflower into florets of similar size
Rinse the florets thoroughly
Blanch the florets in boiling water for 3 minutes
Transfer the florets immediately to ice water for 3 minutes
Drain the florets well
Pat the florets completely dry
Spread the florets in a single layer on a baking sheet
Freeze the florets until solid
Transfer the frozen florets to airtight freezer bags or containers
Remove as much air as possible before sealing
Label with the date
Store in the freezer for up to 12 months
